I have read "Prevent and Reverse Heart Disease" by Caldwell Esselstyn after seeing the Youtube news clip of Bill Clinton discussing his switch to a plant-based diet. Reading about the effects of eating anything with a face or a mother, dairy and oil on my heart has caused me to change the way I eat and cook. I have to admit I was actually depressed thinking about all the foods I would be giving up, but I want to try it for at least 3 weeks and then reassess. Since I have been experiencing a bit of chest pain lately, why not.
What a challenge to cook foods we like with out using olive oil, or even to dress a salad without ANY oil. That is much harder than giving up meat. I really do miss milk, cheese and all dairy. But finding ingredients without fat is nearly impossible.
I won't stick with this if I don't develop recipes that we like to eat and my food allergies are part of the problem. I can't eat onions without severe gastric distress and am actually allergic to bell peppers and watermelon (they cause my throat to close up) and most of the vegan recipes have onions, peppers or both!
So far I have developed two recipes I like that do not seem to be on any internet site. The first is a pancake made without oil or dairy or eggs. I call it a Steamed Breakfast Dumpling.
Ingredients:
1/4 cup whole grain vegan pancake mix
1 container individual serving size diced peaches with the juice
2 Tablespoons dehydrated strawberries
2 teaspoons water
Fold ingredients together and add more water if necessary for a thick batter consistency.
Mound in 8" nonstick skillet and cook at medium temperature until it appears dry around the edges, about 3 minutes. Pancake should be very thick and about 5" in diameter.
Add 2 or 3 Tablespoons water to the pan (don't pour it on top of the pancake, just on the sides of the pan) and immediately cover with lid.
Turn temperature down to low and let steam for 2 minutes to cook the top of the pancake.
Serve with 1 Tbsp. real maple syrup.
