Pan Roasted Beets over Wilted Kale

There is a recipe for Beets over Kale that we tried out tonight—it was very good.  (I used less oil than what it called for, for heart-health.)  I replaced the goat cheese with nutritional yeast and some of the walnuts with flaxseed meal.
