Kale Salad without added oil |
1 whole bunch fresh kale, rinsed, mid-rib removed and torn into 2" pieces
1/4 cup raw cashews coarsely chopped
1 whole lime, zest and juice from
2 tablespoons vegen Worcestershire sauce
1 clove garlic, minced fine
1 can black beans, drained and rinsed
1 whole fresh tomato, diced
1 teaspoon chia seeds
1 teaspoon flaxseed meal as topping
1 teaspoon nutritional yeast as topping
ground black pepper to taste
Brown raw cashews in skillet and set aside.
Steam kale for 3 minutes or less in large pot with lid, use just enough water to cover bottom of pan 1/2" deep. Drain.
Combine Worcestershire sauce and lime zest and juice with garlic, whisk together. Pour over all other ingredients and toss to combine.
This makes two dinner plate size servings, or 4 side servings.
