Savory Mushrooms in Hummus Sauce

Savory Mushrooms in a Hummus Sauce
So you are in the mood for a hot lunch and don't have a lot of time to cook?  Or you need a side dish to go along with your salad?
This can be whipped up in a couple of minutes!

Ingredients:

1 cup fresh mushrooms, sliced
1 clove garlic, minced
3-4 tablespoons water
2 teaspoons low sodium organic soy sauce, more or less to taste
2 tablespoons hummus


Brown mushrooms in non-stick skillet with the minced garlic over medium heat until golden brown (about 2 minutes). Add remaining ingredients and stir to combine into a rich sauce.  Serve over baked potato or brown rice.  Serves 1.

Mushrooms are good for boosting your immunity so eats lots of them.  Remember not to eat the skin of a baked potato as it contains the least nutritious part (see Dr. Michael Greger, M.D.'s videos on nutrition).
