Oatmeal Yam Custard |
As Fall approaches and the mornings are getting cooler here is a re-post an oatmeal recipe.
For a different twist on oatmeal, try adding yams to give it a creamy richness.
Recipe Ingredients:
2 cups non-dairy milk, rice milk or non-fat soy milk
1 cup old fashioned oats or barley (they look the same)
2 tablespoons custard powder (optional)
1 can yams, 15 ounce drained and rinsed and pureed OR 1 to 2 cups fresh baked and pureed yams
Place all ingredients into a 2 quart saucepan and heat over medium temperature until bubbly and thick. Be sure to play some Bobby McFerrin music while you do this.
Serve in small cereal bowls. Use additional milk as a topping, add a pinch of brown sugar or date sugar (optional).
